Highland Park 21 Year Old 2023 Release is a limited annual bottling from Scotland's northernmost distillery, founded in 1798 on Orkney, and a fine example of the rewards of long, unhurried maturation. Master whisky maker Gordon Motion hand-selected 36 casks laid down between 1998 and 2001, ex-bourbon hogsheads, first-fill sherry-seasoned European and American oak, and ex-Rioja casks, and married them for this release, bottled at 92 proof in a 700mL bottle.Enticingly sweet and spicy, it opens with tropical fruit, toasted almond, freshly grated nutmeg and floral heather peat smoke, then a complex, finely balanced palate of lemon zest, aromatic fenugreek, apples caramelized in honey and cinnamon, and a dusting of cedar-smoked sweet paprika. Woody spice lingers at the finish with a hint of citrus oil in the heather-rich smoke.
