Harvest is Castle & Key's autumn gin — a seasonal release built around a botanical blend that speaks to the aromas and flavors of fall. Where the distillery's flagship Roots of Ruin leans bright with citrus, chamomile, and ginger, Harvest dials back the floral character in favor of what the distillery describes as a verdant forest under the first snap of cold. The base is the same rye whiskey new-make that makes every Castle & Key gin distinctive — 63% German rye, 20% malted barley, and 17% yellow corn from Walnut Grove Farm in Adairville, Kentucky — redistilled through a copper column and a custom Vendome dual-basket gin still with eight botanicals: juniper, coriander, angelica root, and cedar leaf for the piney backbone, plus star anise, sumac, fennel, and bay leaf, none of which had appeared in a Castle & Key seasonal before. Bottled at cask-strength-adjacent 51% ABV (102 proof) in a limited run each September. Skurnik's notes: aromas of soft pine, bay leaf, cracked pepper, and berry compote with anise, transitioning to an earthy, woodsy palate of fresh cedar, licorice, and cinnamon with a sweet, spicy finish.
