High Wheat is Bardstown Bourbon Company pushing its own wheated recipe to the edge — 39% wheat, one of the highest proportions in any Kentucky bourbon, in a mash bill where most wheaters stop around 20. Launched in August 2024 as an ongoing core release in the Origin Series — the line of whiskey Bardstown distills, ages, and bottles entirely on its own site — it carries the six-year age statement of its siblings but ups the proof to 106, and it's built on an unusual choice: a barrel-entry proof of just 108, far below the 125 maximum most distilleries use, which pulls more sugar and less harsh tannin from the wood and keeps the wheat's softness intact. The full mash bill and age are printed on the label, as with everything Bardstown makes. Breaking Bourbon found it flavorful and full of sweet notes: apricot, orange zest, and vanilla cream accented by white pepper on the nose, then buttercream frosting, butterscotch candy, and toffee mingling with dried apricot on the palate, and a finish of cinnamon, allspice, and slight leather where the warmth builds — robust at 106 proof, but never hot. Expect the wheated hallmarks of Maker's or Weller amplified: soft, sweet, pastry-like, with more body and more fruit than the Bottled in Bond and a longer, spicier close. For drinkers who love wheated bourbon and find most of the famous names allocated out of reach, this is the one to buy.
